Spicy Thai Crab Noodle Soup

Quick-and-easy, spicy crab noodle soup is a fragrant healthy Thai noodle dish, full of sweet and sour Asian flavours.

Serves 2
2 pints chicken stock
2 tbsp coconut sweet chilli
200g tin plum tomatoes
1 tsp Thai red curry paste
300g vermicelli rice noodles
100g tinned crab
1 splash fish sauce
1/2 red onion thin sliced
1 small bunch coriander
1. Boil stock in pan
2. Drain tomatoes & 1/4 them
3. Add sweet chilli, tomatoes, curry
4. Share noodles into bowls
5. Mix crab, share into bowls
6. Mix up noodles and crab
7. Fill bowl with Thai stock mix
8. Mix slightly to incorporate
9. Scatter coriander, onions
10. Add splash of fish sauce
